Mediterranean Tostadas
Mediterranean Tostadas easily convert from one person to ten, because exact measurements do not apply. Just gather the team and let them choose the toppings they like. I used some of the Balsamic vinaigrette left over from the Tortellini Salad. The tostadas were messy but oh so divine.

Tortillas or pitas
Hummus, homemade or store bought
Shredded romaine lettuce
Cooked chicken, shredded
Red bell pepper, chopped
Red Onion, chopped
Light olive oil vinaigrette
Cut the pita around the edges to form two circles. Spray with nonstick cooking spray and grill or broil for 1 to 2 minutes on each side or until crips and golden brown. Remove from grill and place one pita circle on each plate. Spread with equal amounts of hummus. Toss remaining ingredients in a medium bowl and place over hummus.
